Description
Our Coconut Flour is made from dried, ground coconut meat and it is one of the healthiest flours available. Grain flour such as wheat, barley and spelt contain gluten which is very difficult to digest for some people. Even gluten free flours are often inflammatory due to the carbohydrate load. Because Coconut Flour is not a grain-based flour, it is non-inflammatory and it is low in carbs.
Unlike other nut and seed flours, like the commonly used almond flour, Coconut Flour is very low in omega-6. Omega-6 is inflammatory when consumed in excess. Coconut Flour does not contain enzyme inhibitors – like other nut and seed flours with high content of enzyme inhibitors, which can adversely affect our digestion. In addition, Coconut Flour is high in fiber – providing a satiating effect.
Coconut flour can be substituted for up to 1/3rd of wheat flour in standard recipes. Because it is gluten-free, it is necessary to add egg, chia gel, or even substitute a small amount of tapioca flour to assure that it binds properly.
Using adequate liquid and eggs to act as a binder prevents a dry or crumbly result. When used in the correct amount, Coconut Flour creates delightfully moist and light-textured baked goods.
